3.5 cups flour (Caputo 00)
4 eggs (room temp)
1/2 tbs salt
About 6 tablespoons of water
(Don’t add the water yet)
We use a mixer to start with the regular beater, speed 1. About 2 min. Then add a teeny bit of water, about 2 tbs. Once the kitchen aid starts to struggle, switch to the dough hook.
Add 1 tbs water at a time…not too much and let it mix. Once everything sticks together, pull it out and lead by hand on a floured wooden surface until the surface bounces up when you push it down. Then wrap in Saran Wrap in the fridge for 30 min
